A Historic Name in Chablis

Founded in 1815, Domaine Billaud-Simon stands among the most respected estates in Chablis, with a reputation built on precision, terroir transparency and a deep understanding of the region’s unique Kimmeridgian soils. Today, under the direction of Olivier Bailly and the ownership of the Faiveley family, the estate continues to produce some of the most refined and age-worthy expressions of Chardonnay in Burgundy. The philosophy remains firmly rooted in allowing each vineyard site to speak clearly, with an emphasis on purity, freshness and mineral precision rather than overt winemaking influence.

The domaine’s holdings span an impressive range of appellations, from Petit Chablis and village-level wines through to some of the region’s most coveted Premier Cru and Grand Cru sites, including Les Clos, Les Preuses, Blanchots, Vaudésir and Valmur. Across the range, the wines are distinguished by aromas of citrus, white flowers and oyster shell, underpinned by the saline minerality and tension that have become hallmarks of the estate. Whether from village vineyards or Grand Cru sites, Billaud-Simon consistently produces wines that combine power with elegance and possess the structure to age gracefully for decades.

Viticulture & Winemaking

Billaud-Simon works with a meticulous vineyard approach focused on expressing the character of each climat. Fruit is harvested in small crates and carefully sorted before gentle pressing. The estate employs long settling periods for the must, prioritising purity and precision. Fermentations take place in a combination of stainless steel tanks, vats and selected oak vessels depending on the vineyard and cuvée. Oak influence is deliberately restrained, used as a tool for texture and complexity rather than flavour. Certain Grand Crus may see a proportion of barrel ageing, while other wines are vinified entirely in stainless steel to preserve freshness and mineral detail.

The estate is particularly known for its pursuit of balance through relatively late harvesting, a long-standing house philosophy that allows for full phenolic maturity while retaining the tension and energy that define great Chablis. The resulting wines are noted for their crystalline fruit, saline minerality, precision and exceptional ageing potential. Vineyard work is carried out with great respect for the environment, with herbicides avoided and a strong focus on sustainable farming practices.

The 2023 Vintage

The 2023 vintage in Chablis delivered wines of remarkable concentration and generosity while maintaining the region’s hallmark freshness. Following a warm growing season, fruit reached excellent ripeness levels, producing wines with greater depth and textural richness than many recent vintages. At Billaud-Simon, yields were healthy and fruit quality was exceptionally clean, allowing for precise expression across the entire range.

Critics have highlighted the vintage’s combination of ripe orchard fruit, citrus intensity, floral aromatics and impressive mineral drive. The Grand Crus in particular show outstanding concentration and ageing potential, while the Premier Crus offer remarkable balance between richness and tension. Despite the warmer conditions, the wines retain the freshness, salinity and limestone-driven character that define the estate’s style. The vintage is likely to appeal both to traditional Chablis drinkers seeking precision and to collectors looking for wines with immediate appeal and long-term cellaring potential.
