Mont de Milieu occupies a privileged position on the right bank of Chablis, directly opposite the Grand Cru slope. Billaud-Simon’s wine is produced from four separate parcels spread across different elevations and exposures, providing a complete expression of the vineyard’s complexity. The site’s limestone-rich soils and ideal exposure consistently deliver wines of both power and finesse. Fermentation and ageing are carefully managed to preserve freshness while allowing the vineyard’s natural richness to emerge.

The 2023 vintage has produced an especially compelling Mont de Milieu. Aromas of fresh citrus, white flowers, peony and crisp apple are layered with subtle mineral and smoky nuances. The palate combines concentration and texture with the hallmark tension of Chablis, offering impressive depth without sacrificing energy. Rich orchard fruit flavours are balanced by bright acidity and a long, saline finish. A wine that beautifully bridges the gap between Premier Cru elegance and Grand Cru intensity.
