Produced from a selection of vineyards spread throughout the Chablis appellation, this cuvée offers a classic expression of the region’s unique terroir. The vines are rooted in Kimmeridgian limestone and clay soils, the ancient seabed responsible for the mineral character that defines great Chablis. Fermentation and élevage are carried out entirely in stainless steel, allowing the purity of Chardonnay and vineyard character to remain front and centre.

The 2023 vintage has delivered a Chablis of impressive balance, combining ripe fruit with freshness and tension. The nose opens with vine peach, citrus fruits, white flowers and subtle brioche notes. On the palate, the wine is generous yet focused, with layers of lemon, orchard fruit and delicate mineral nuances carried by vibrant acidity. Richer and more textured than some recent vintages, it nonetheless retains the precision and saline finish that have become signatures of Billaud-Simon.
