Filipa Pato and William Wouters have become one of Portugal's most influential winemaking partnerships, redefining the potential of Bairrada through a shared philosophy of producing authentic wines "without makeup"—wines that express vineyard, variety and vintage with complete transparency. Filipa, daughter of the legendary Luís Pato, combines her experience gained in Bordeaux, Mendoza and Margaret River with William's background as an award-winning sommelier, chef and restaurateur. Together they focus exclusively on Bairrada's indigenous grape varieties—Baga, Bical, Arinto, Cercial and Maria Gomes—farmed biodynamically and crafted with minimal intervention, indigenous yeasts and traditional methods that allow each vineyard to speak for itself.
The estate has earned international acclaim over the past decade, establishing itself among Portugal's elite producers. Their wines are now regular fixtures in the reviews of Robert Parker, James Suckling, Decanter and Wine Spectator, while the flagship Nossa Calcário range has collected an extraordinary list of accolades. Most notably, the 2023 Nossa Calcário Baga was named James Suckling's #1 Wine of Portugal, cementing Filipa and William's reputation as the benchmark producers of modern Baga. Critics have praised their ability to transform a variety once known for its firm structure into wines of remarkable elegance, freshness and drinkability without sacrificing longevity.
Located just south of Porto, Bairrada is one of Portugal's oldest and most distinctive wine regions, shaped by its close proximity to the Atlantic Ocean and its famous Jurassic limestone ("calcário") soils. The cool maritime climate preserves natural acidity while the limestone-rich clay soils impart remarkable tension, precision and mineral character to both whites and reds. Although historically celebrated for robust Baga reds and traditional method sparkling wines, a new generation of growers led by Filipa Pato and William Wouters has revitalised the region through biodynamic viticulture, lower yields and sensitive winemaking, revealing a more refined and terroir-driven expression of Bairrada that has captured worldwide attention.
This collection showcases the breadth of their work, from the vibrant 3B Blanc de Blancs sparkling and the maritime freshness of D.N.M.C. Bical & Arinto, through to a progression of Baga; from the approachable D.N.M.C. Baga, to the amphora-raised Post Quercus, and culminating in the profound Nossa Calcário, sourced from biodynamically farmed centenarian vineyards on ancient limestone soils.
