Produced from 80% Bical, 11% Cercial and 9% Maria Gomes, sourced from multiple limestone vineyards across Bairrada, with the harvest commencing in August to preserve naturally high acidity. The grapes are hand-picked, whole-bunch pressed and fermented with indigenous yeasts before undergoing traditional bottle fermentation and spending 9 months on lees. Bottled as Extra Brut with no dosage, this is a pure expression of the region's Atlantic climate and Jurassic limestone soils. Fine bubbles, chalky minerality and subtle orchard fruit complete the style.
