After gentle pre-clarification and natural settling, fermentation took place in stainless steel, followed by six months of ageing on fine lees. The wine opens with a quietly complex bouquet, layering fragrant herbs and spice with delicate notes of pear and yellow apple. On the palate it is dry, silken and finely textured, its subtle tannic grip and salty, smoky minerality giving the wine both structure and drive. Racy lime acidity threads through the mid-palate, keeping everything taut and precise. Still steely and restrained in its youth, it promises to build further depth, power and intensity with time.
