The Hedonist Cabernet Sauvignon comes from certified organic and biodynamic estate vineyards in the Willunga foothills of McLaren Vale. Planted on rich loam over clay with limestone patches, the grapes are destemmed, and fermented with some whole berries using indigenous yeasts for 11 days on skins. Matured for 15 months in mostly seasoned French oak with 15% new puncheons, this wine is deep ruby with wild blackberry and rich truffle aromas, lifted by delicate clove. A medium to full-bodied, savoury expression with bright fruit purity, complex savory notes, and a long, chewy finish. A showcase of cool-climate elegance from McLaren Vale.
