The 2025 Crayères Vineyard Sauvignon Blanc is a finely detailed and savoury expression from the limestone-rich slopes of Wrattonbully, combining purity, texture and precision. Aromatically, the wine leans toward restrained citrus, preserved lemon, white stone fruit and subtle herbal nuances, underpinned by a distinct chalky minerality and gentle oak complexity. The palate is dry and tightly structured, with vibrant natural acidity providing energy and focus throughout. Ripe fruit concentration from the low-yielding, close-planted vineyard is balanced by a savoury edge and a velvety, layered texture derived from fermentation in old oak barrels and demi-muids.
The Terra Rossa soils over limestone contribute both generosity and freshness, while the cool season and extended dry conditions leading into harvest preserved remarkable acidity and flavour definition. The absence of malolactic fermentation retains tension and precision, allowing the mineral profile and fruit purity to remain at the forefront.
A wine of persistence and composure, the 2025 vintage shows excellent balance between richness and restraint, with a long, saline finish carrying notes of citrus peel, wet stone and subtle spice. Although already highly expressive, this Sauvignon Blanc has the structure and concentration to reward careful cellaring, developing further complexity and depth with bottle age.
