Périne Baillette, daughter of founder Pierre Baillette, now leads this family-run Champagne house in the small village of Trois-Puits. Immersed in wine from an early age, her path seemed almost predetermined. She is married to fellow acclaimed Champagne producer Alexandre Chartogne, and together their shared passion and expertise have helped shape her distinctive winemaking voice.

Since 2010, pesticides have been entirely eliminated from the Baillette vineyards. Machinery use is kept to a minimum, with vineyard work often carried out by powerful draft horses who plough the soils. This gentle, thoughtful approach continues in the cellar, where fermentations occur naturally and interventions are kept to a minimum before bottling. The result is a range of superb Champagnes: creamy, complex, and expressive, with layers of fruit and texture. These are wines well worth seeking out.
