Nadeson Collis Inception is the work of Ray Nadeson and Maree Collis, sparkling specialists inspired by the rich, complex wines of Champagne’s Côte des Bar. Sourced from the cool, schist-soiled vineyards of Drumborg in Henty, the blend is 89% Chardonnay with small additions of Pinot Noir, Pinot Gris, and Meunier. Crafted in the traditional method, 89% of the wine comes from the 2020 vintage, with 11% drawn from a perpetual reserve started in 2006; it was whole-bunch pressed, naturally fermented in barrique and foudre, aged in oak for 15 months, then matured on lees in bottle for 27 months before disgorgement with just 1.5 g/L dosage. The nose offers green apple, citrus, and oyster shell, leading to a palate of crisp white peach, fine texture, and a long, chalky finish. A dry, complex Australian sparkling with a distinctly Champagne-like elegance.
