The Les Fruits project, led by former sommelier, Georgian wine importer, and winemaker Tim Stock, was developed in collaboration with now-retired Saint Aubin vigneron Jean Jacques Morel. Through Les Fruits, Tim works with a selection of organic and biodynamic vineyards across the Adelaide Hills, Barossa, and McLaren Vale to create a diverse range of wines.

Ruby comes from one of the Barossa’s rare organic Cinsault parcels, tended by Brad Hickey. The grapes were destemmed and macerated for four days before being pressed to barrel for fermentation and a brief period of élevage.

Delicately extracted and very light-bodied, this wine is gently saline with vibrant red fruit and an exceptionally fine, polished structure—perfect for enjoying slightly chilled.
