Joshua Cooper’s Pyren Cabernet Sauvignon is a powerful yet introspective expression from one of Victoria’s most exciting young winemakers, crafted with fruit sourced from sensitively farmed vineyards in the Pyrenees. The region’s varied geology and mature vines provide the raw material for Josh’s minimal-intervention approach, where small additions of sulphur are the only input. Fermented naturally and aged with restraint, this is a structured, layered wine with dense dark cherry, cassis, tobacco and spice, and a frame of fine, mouth-coating tannins. It's a contemplative wine that rewards time and air.
