The Toriibira Vineyard is treasured within the Katsunuma region for its well-drained clay-gravel soils at about 450m altitude, producing Koshu grapes with intensity and balance. In 2022, the best lots were fermented in old French oak and matured in stainless steel to preserve freshness, resulting in a dry, elegant white with vibrant acidity and complex layers of golden apple, white peach, spice and delicate toastiness. The season offered steady growth and healthy fruit development, with minimal disease pressure and optimal ripening conditions that emphasised both power and finesse in this site-specific Koshu.
