Hishiyama Vineyard, one of Katsunuma’s highest-altitude Koshu sites, benefits from cool climes and distinct day-night temperature swings. The 2023 Hishiyama bottling highlights signature citrus, floral and mineral notes that reflect this site’s unique soil profile and elevation. Grapes were gently pressed and fermented in stainless steel, preserving purity and vibrant acidity, with the vintage’s warm summer and carefully timed harvest yielding concentrated flavours while retaining fresh liveliness.
