Sourced from cooler slopes in Ashton and Forest Range, planted on quartz-rich soils, this Sauvignon Blanc is handled with restraint and intention. Whole-bunch pressed and fermented naturally, a portion sees skin contact and maturation in older oak to build structure and texture. The 2025 release moves beyond varietal stereotype, offering citrus peel, green apple and subtle herbal notes, underpinned by bright acidity and mineral drive. Focused and textural, it’s Sauvignon Blanc viewed through the lens of site rather than style.
