This Chablis reflects the complementarity of its terroirs. Beines brings tension and salinity, while Courgis adds structure and generosity. A balanced élevage preserves fruit purity and mineral precision, delivering layered citrus and stone fruit, pronounced tension, and a long, focused finish. Complex and structured. Aged on lees for 11 months, 90% in concrete vats followed by stainless steel, and 10% in old barrels. 

Founded in 2023 by Tommy Chevallier in the village of Venoy, Domaine du Triptyque carries a family legacy forward with a distinctly forward-thinking vision. The vineyards, passed down from his father and uncle, have been farmed organically since 2018. A new winery built from biosourced materials, largely powered by solar energy, was completed in 2024. In the cellar, natural fermentations, indigenous yeasts and bottling without fining or filtration preserve the full expression of each vintage. This is Chablis for the next generation, made with the same reverence for terroir and a new commitment to the land's future.
