A Burgundian-inspired Chardonnay from Jura, grown organically on richer soils that lend the wine density and richness. Aromas and flavours of yellow fruits, apricot and golden plum, are layered with notes of butter and spice. Grapes are hand-harvested and partially destemmed, then fermented with indigenous yeasts in large, old foudres and aged on lees for 24 months. The wine is topped up, unfiltered, unfined, and contains no added SO₂.
