The wine is made with \u003cstrong\u003e95% whole bunches\u003c\/strong\u003e, wild fermented in a 4,000L concrete vat using a vineyard-derived \u003cem\u003epied de cuve\u003c\/em\u003e. Carbonic maceration is employed, with the fruit left untouched for the first seven days before gentle hand and foot plunging.\u003cspan class=\"PDq2pG_selectionAnchor\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eFollowing malolactic fermentation, the wine was matured for an extraordinary \u003cstrong\u003e48 months in a seasoned 2,800L French oak foudre\u003c\/strong\u003e, then bottled unfined and unfiltered, with a further two and a half years of bottle ageing prior to release. Dark earth, red cherry and liquorice lead into ripe black fruits, spice, sage, cacao and a mineral-edged earthiness.
